 Ingredients 

  • ¼ cup olive oil(60 mL)
  • 1 large onion, chopped
  • 3 large carrots, sliced
  • 4 stalks celery, chopped
  • kosher salt, to taste
  • black pepper, to taste
  • 3 cloves garlic, chopped
  • 8 cups chicken broth(2 L)
  • 8 oz egg noodles(225 g)
  • 4 cups shredded chicken breast(500 g)
  • ½ cup fresh parsley(10 g), chopped
  • parmesan cheese, shredded, to taste
